Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed high sanitizing dish machine on 3rd floor not reaching minimum sanitizing rinse temperature. CA: Discussed minimum rinse temperature for dish machine on 3rd floor. COS: pic will have dish machine serviced and check booster. Health Dept. will re--check 24 hours and all dishes on 3rd floor will be sanitized properly in main dish machine in main kitchen.
