Inspector did not observe a splash guard between the meat prep sink and the 4 compartment dish sink. CA: Install a splash guard.

Regulation: 511-6-1.06(2)(p),(q) - prohibiting a cross connection; scheduling inspection and service for a water system device (p, pf)
Inspector observed cross connection between meat prep sink and 4 compartment dish sink. CA: A person may not create a cross connection by connecting a pipe or conduit between the drinking water system and a nondrinking water system or a water system of unknown quality.
16C - sewage and waste water properly disposed

Inspector observed a direct connection from food prep sinks, warewashing sinks, and hand sinks throughout the main kitchen. CA: a direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed.

Inspector observed large raw wood step under pizza oven. Inspector observed raw wood wedged between mop sink and wall. CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
17C - physical facilities installed, maintained, and clean

Inspector observed a cove base not installed from wall to marble flooring. CA: The floor and wall junctures shall be coved and closed to no larger than one thirty-second inch (1 mm).
