12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Inspector observed food handler actively prepping food without a hair restraint. COS - PIC had food handler don a hair net. Corrective action: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Inspector observed wet wiping cloth in sanitizer bucket stored out of the sanitizer solution over the edge of the bucket; sanitizer height too low too fully submerge the wiping cloth. COS - PIC made new sanitizer to refill bucket and fully submerged wiping cloth in sanitizer solution. Corrective action: Wet wiping cloths shall be fully submerged in sanitizer solution.
17A - toilet facilities: properly constructed, supplied, cleaned
Regulation: 511-6-1.07(5)(h) - cleaning plumbing fixtures- handsinks, urinals & toilets (c)
Inspector observed mold-like growth on seals of both hand washing sinks. Corrective action: Hand sinks shall be clean and in good repair.
