4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Inspector observed container of tomato soup with a "BBQ" label and other utensils stored as clean with labels. Corrective action: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS - PIC discarded.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Inspector observed mold-like growth on the soda nozzles at the servers station, bar soda guns, and Pina Colada dispenser; dining tables sanitized with a single sanitizer bucket. Corrective action: Beverage dispensing nozzles shall be cleaned at a frequency necessary to preclude accumulation of soil or mold. COS - PIC pulled nozzles for re-wash and switched to 2 sani bucket method.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Inspector observed a multitude of TCS foods in the walk-in cooler date marked longer than 7 days. Corrective action: Date marking must be for 7 days maximum, including prep day as day 1. COS - PIC relabeled with correct dates.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(f) - prohibitions, cleaned & sanitized equipment, utensils & laundered linens (c)
Inspector observed clean linens, aprons, wiping cloths, and paper towels stored in an unapproved location (stored outside main kitchen's rear door leading to exterior). Corrective action: Cleaned and sanitized equipment, utensils, laundered linens, and single-service and single-use articles may not be stored in or under any source of contamination.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Inspector observed pre-set glasses on dining tables not stored inverted, glasses at server's soda station not stored inverted, and utensils wet stacked as clean. Corrective action: Store glasses inverted to prevent contamination and store clean utensils in a self-draining position; completely air-dry utensils before stacking as clean.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Inspector observed a chipped knife blade stored on a prep-top cutting board and a melted cutting board stored at the range. Corrective action: Equipment shall me maintained in good repair.
