Inspector observed TCS food in cooler at 49F. COS-discarded. Corrective Action: Time/temperature control for safety food shall be maintained at 41°F or below.

Inspector observed lack of method to dry hands at front food service handwashing sink and main kitchen handwashing sink. COS-PIC supplied both sinks with hand drying towels. Corrective Action: Each handwashing sink or group of adjacent handwashing sinks shall be provided with:
Individual, disposable towels.
A continuous towel system that supplies the user with a clean towel.
A heated-air hand drying device.
A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures.

Observed sanibuckets at front food service and food prep areas both at 0 ppm Cl. Inspector observed sanibucket at ware washing area at over 200 ppm Cl. COS-replaced all buckets with sanitizer solution between 50-100 ppm Cl. Advised PIC to maintain correct sanitizer levels of sanitizing solutions.
