6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Inspector observed cold held TCS products greater than 41 degrees F in the reach-in cooler and the carafes. Corrective Action: Check temperatures more frequently (using a thermomter) to ensure cold held items are 41 degrees F or below. COS PIC discarded out of temperature items and restocked items from the main kitchen reach-in cooler.
