2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Inspector observed all 3 hand sinks in main kitchen were blocked with utensils, rags and an empty sanitizer bucket. COS - PIC cleared all blocked hand sinks. Corrective action: A handwashing sink shall be maintained so that it is accessible at all times for employee use.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Inspector observed a multitude of foods stored uncovered on shelves below the top shelf of the dry storage racks, reach-in coolers, and reach-in freezers. COS - PIC had kitchen staff put lids and covers on the uncovered foods. Corrective action: Food must be covered and protected from contamination, unless cooling on the top shelf/speed rack.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Inspector observed a multitude of bowls/cups used as scoops in bulk spices, and spoon handle stored in direct contact with the food. COS - PIC removed spoon and will use scoops with a handle. Corrective action: Scoops must have a handle and handles must be stored out of the food.
