6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed chicken and soup in warming cabinet hot held at or below 41F. Cabinet thermometer was not displaying, and unit was only warm to touch. Advised PIC to repair/ adjust unit and provide thermometer for inside the unit. COS- per cook, foods were cooked less than an hour ago, foods placed in refrigerator to cool to 41F or below.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(4)(b) - fixed equipment, spacing or sealing (c)
Observed hole in the wall for water meter. Advised PIC to cover water meter area with removable cover.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(h),(i) - warewashing equipment, clean solutions; manual warewashing equipment, wash solution temperature (c,pf)
Observed the 3-compartment sink does not have drain stoppers. Advised PIC to provide drain stoppers.
