6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Inspector observed cold held products greater than 41 degrees F. (Location: Prep Top Coolers at the grill line). Corrective Action: Cold Held - TCS -products must be at 41 degrees F or colder. COS PIC discarded items above 41 degrees F and restocked from the walk-in cooler.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Inspector observed both hand sinks in the main kitchen not stocked with soap. Corrective Action: Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. COS PIC restocked soap.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Inspector observed hand sink near dish machine blocked with silverware organizers. Corrective Action: A handwashing sink shall be maintained so that it is accessible at all times for employee use. COS PIC removed items blocking the hand sink.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(c) - multiuse food-contact surfaces (pf)
Inspector observed several knives chipped (Location: magnetic strips), numerous dining bowls chipped (Location: Prep table), grill brush for the pizza oven worn with frayed bristles. Corrective Action: Multiuse food-contact surfaces shall be: Smooth; Free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections; Free of sharp internal angles, corners, and crevices. COS PIC discarded broken utensils and grill brush.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Inspector observed cardboard liners throughout the kitchen. Corrective Action: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Inspector observed employee drinks, keys, charging cords, earbuds above prep top (at the grill line) and above FCS equipment (near dish machine). Inspector observed jacket above dry food product in dry storage area). Corrective Action: Lockers or other suitable facilities shall be used for the orderly storage of employee clothing and other possessions. COS PIC relocated employee belongings.
