Inspector observed items listed "White Fish" and "Red Snapper" on menus. PIC stated the "White Fish" is Escolar and "Red Snapper" is Tilapia. CA: Food shall be offered for human consumption in a way that does not mislead or misinform the consumer.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Inspector observed "Popping Pearls" containers used to store other food products (bamboo shoots, ketchup) [Location: walk-in cooler and reach-in cooler at the grill line]. COS: PIC discarded single use containers and replaced with reusable food grade containers. CA: Single-service and single-use articles may not be reused.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Inspector observed fwc/under equipment throughout the main kitchen with build-up food residue and debris. CA: The physical facilities shall be cleaned as often as necessary to keep them clean.
