6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed cole slaw in the front reach in cooler 50F. COS-cole slaw and ranch dressing cup discard. Corrective action: Store cole slaw and rand dressing cups in a unit that can maintain TCS foods at or below 41F and repair/replace front unit.

Observed ham in 2 drawer cooler under griddle 43-50F. COS- Discarded. Corrective action: discontinue use of drawer cooler until it is repaired/replaced to maintain TCS foods at or below 41F.

Observed chicken batter wash at 50F. COS-discarded and replace with new wash from the walk in cooler. Corrective action keep the prep both top trays inside the top of the prep unit to hold refrigerated air in place even if only one pan has product; and keep station cover on when not in use to maintain TCS foods at or below 41F.

Person in charge not performing duties; not maintaining receiving/corrective action records for key drop deliveries. Corrective action: ensure food distributor is documenting key drop temperatures.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed CFSM certificate expired 4-1-26. Corrective action obtain a certified food safety manager within 30 days.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the sanitizer at the 3-compartment sink was 0ppm QAC, sanitizer dispenser not functioning properly. COS- water was drained and rest manually with Kay 5 sanitizer packet, sanitizer solution corrected to 50ppm Cl.
4-2B - food-contact surfaces: cleaned & sanitized
Observed the self-serve ice machine maker drains that drain into the drain tray reservoir of drink dispenser covered with a moldlike substance. Corrective action service/deep clean the drink dispenser ice maker and service with a frequency to prevent a buildup of debris.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed restroom cleaner hanging on the shelf above the meat prep sink. COS-cleaner moved to the cleaner storage rack. Corrective action: keep cleaner in an area that is not above food, equipment, utensils, linens, and single-service or single-use articles.
