Inspector observed front food service sanibucket at 0 ppm. COS-remade solution so that it is approximately 50 ppm Cl. Advised PIC to ensure that sanitizer levels are sufficient.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Inspector observed food stored on the floor of the walk-in cooler. COS-relocated. Corrective Action: Food shall be protected from contamination by storing the food at least 6 inches (15 cm) above the floor.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Inspector observed outer door propped open. Inspector observed inner screen door that is closed but had gap underneath. COS- closed outer door. Corrective Action: outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors.
