4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Inspector observed sanitizer solution in 3-comp and sani buckets measured 0 ppm Quat. COS - PIC discovered air trapped in sanitizer line and manually added sanitizer; new 3-comp sani solution measured ~300 ppm Quat with test strip. Corrective action: Quaternary sanitizer solution must measure between 200-400 ppm.
18 - insects, rodents, and animals not present

Inspector observed light gap at bottom of kitchen door leading to exterior. Corrective action: Doors leading to the exterior must be tight-fitting with no visible daylight gaps.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Inspector observed utensils wet stacked as clean. Corrective action: Utensils must be stored in a self-draining position and completely air-dried before stacking as clean.
