2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Inspector observed both main kitchen hand sinks blocked. (HS adjacent to cookline blocked by a cart with margarine mix)(HS adjacent to the Dish Pit blocked by extra-large tub of sugar) COS PIC relocated the items blocking the hand sinks and retrained staff on hand sink accessibility. CA: 1. A handwashing sink shall be maintained so that it is accessible at all times for employee use.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Inspector observed exterior doors with light showing around the seams. Inspector observed rear exterior doors with self-closers in disrepair. CA: 1. Except as specified in paragraphs 2 through 5 of this subsection, outer openings of a food service establishment shall be protected against the entry of insects and rodents by: (iii) Solid, self-closing, tight-fitting doors.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Inspector observed clean utensils not inverted on the drying rack. COS PIC inverted the utensils. CA: 2. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored: (i) In a self-draining position that allows air drying; and (ii) Covered or inverted.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(b) - cutting surfaces (c)
Inspector observed cutting boards heavily scored. Inspector observed cutting boards and pizza paddles stained with dark speckled spots. CA: Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced.
17A - toilet facilities: properly constructed, supplied, cleaned
Regulation: 511-6-1.07(5)(i) - closing toilet room doors (c)
Inspector observed restroom #1 door (closest to the bar) not self-closing and door open. Inspector observed restroom #2 door partially self-closing and door open. COS PIC closed restroom doors. CA: Except during cleaning and maintenance operations, toilet room doors as specified under subsection (2)(l) of this Rule shall be kept closed.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Inspector observed wall behind fryer with a buildup of grease. Inspector observed the ceiling and ceiling vents throughout the main kitchen with a buildup of dust. Inspector observed wall and air curtain at the rear exterior kitchen door with a buildup of dust. CA: (b) Cleaning, Frequency and Restrictions.
- The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
- Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing.
