Observed memory car unit dish machine temperature 147F, not reaching wash or final rinse sanitization temperatures. Advised PIC to repair/replace unit to reach a minimum of 160F final rinse sanitization temperature at the interior dish level. COS- All dishes and utensils shall be washed in the main kitchen dish machine until unit is repaired.

Observed interior of the memory care unit dish machine cover in a pink mold like substance. Advised PIC to deep clean the unit, and deep keep with a frequency to prevent build up.
