3-1C - food in good condition, safe, and unadulterated
Regulation: 511-6-1.04(3)(e) - package integrity (pf)
Observed dented cans on the canned goods racks. COS- all cans that were dented on the seal marked and relocated to the manager's office. Corrective action: inspect canned goods when received and either discard dented cans or place in a separate area marked and labeled "DO NOT USE" to until returned to the distributor for credit.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed hand sink next to the cook line/dish wash area does not have hot water. Corrective action- repair sink to provide hot water a minimum of 85F and provide adequate hot water pressure.

Observed the sink next to the drink station does not have soap. Corrective action: repair/replace soap dispenser at the hand sink and provide soap for effective hand washing at the sink at all times.

Observed the sink next to the cook line/ dish wash area did not have paper towels. Corrective action: provide paper towels at the hand sink at all times,

Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed the hand sink next to the cook line/ dish wash area blocked with strainer. Corrective action: A handwashing sink shall be maintained so that it is accessible at all times for employee use and may not be used for purposes other than handwashing.
4-2B - food-contact surfaces: cleaned & sanitized
Observed mold-like growth on the lines connected to the water filter, dump sinks, and the entire drink station area. 3 compartment sink seal at wall. COS Corrective action: at the end of the day melt the ice, deep clean and sanitize ice bin, sinks, and drink station shelves/area and then clean with a frequency to avoid a buildup of moldlike substance.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed a buildup of debris and trash beneath the beverage area and behind the ice machine. Corrective action: clean with a frequency to prevent an accumulation of debris and moldlike substance.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(f) - lighting intensity, adequate in food prep, storage & service areas (c)
Observed inadequate lighting above the dishwashing area. Corrective action: repair/ replace the light fixture above the dish wash area to provide least 50 foot candles (540 lux) at a surface where a food service employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor.
