Observed employee chew gum in food prep area. COS- discarded. Observed employee drink store above prep area. COS relocated.
Advised PIC- Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.

Observed light gap at back door. Advise PIC to have door repaired so it is tight-fitting and denies access to pests.

Observed scoop handle in food. COS removed. Advised PIC to keep scoop handles out of food to prevent contamination.

Observed utensils wet stacked. COS pulled for re-wash. Advised PIC to completely air dry and air dry only before stacking.

Observed several pieces of equipment in poor repair like missing prep-top lid and the walk-in door does not shut properly and has a large portion missing on the interior side - no longer easy to clean. Advise PIC to keep equipment in good repair, replace missing/broken prep-top lid(s) and repair/replace the walk-in door as soon as possible to help maintain temperatures for food safety.
