Observed multiple TCS food items in reach-in-cooler that have been stored past the 7 day requirement. PIC discarded food items and will only hold TCS food items up to 7 days and dispose of them accordingly. 511-6-1.04(6)(h) - Ready-To-Eat Time/Temperature Control for Safety Food, Disposition (P) (h) Ready-to-Eat, Time/Temperature Control for Safety Food, Disposition.

1. A food that requires datemarking shall be discarded if it:

(i) Exceeds 7 days, not including the time that the product is frozen; P

(ii) Is in a container or package that does not bear a date or day; P or

(iii) Is inappropriately marked with a date or day that exceeds 7 days . P

2. Refrigerated, ready-to-eat, time / temperature control for safety food prepared in a food service establishment and dispensed through a vending machine with an automatic shutoff control shall be discarded if it exceeds 7 days. P

Observed uncovered chicken in the pre top fridge. PIC covered the chicken.

Observed the permit for the facility was expired. Upon further investigation, EHS observed the facility has not paid for their permit.

1. Post the permit in a location in the food service establishment that is conspicuous to consumers

Legal Notice issued.

Observed expired half & half dated best by 09/12/24 in the WIC.

Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. P

PIC discarded the dairy product.

Observed the screen for the dishwasher in the kitchen was not reading the final rinse. EHS tested the Dishwasher to ensure it was reaching at least 160 F.

A warewashing machine shall be equipped with a temperature measuring device that indicates the temperature of the water:

1. In each wash and rinse tank; Pf and

2. As the water enters the hot water sanitizing final rinse manifold or in the chemical sanitizing solution tank. Pf

PIC will will contact their vendor Ecolab to service the display screen.
