Observed build up of soil debris inside of oven located in the main kitchen area. CA: Advised PIC Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf.

Observed several sandwich breads being stored in the main kitchen beyond date of expiration. CA: Advised PIC foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date.

Observed dishwasher inability to sanitize dishes with either sanitizing solution(quat, chlorine etc.) or 180*F hot water. CA: Advised PIC to figure out dishwasher's cleaning method and acquire the correct testing strips to ensure dishes are properly being cleaned.
