15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed soiled black-like residue on nozzles and baffle of drink station in customer self-service area. Observed black/pink residue inside hand sink in main kitchen area. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. CA: Advised PIC to frequently clean all non-food contact surfaces of equipment.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed heavy ice build-up on floors and walls of walk-in freezer. Observed broken/cracked floor tiles throughout main kitchen and walk-in cooler. All physical facilities shall be maintained in good repair. CA: advised PIC to have freezer serviced and replace floor tiles.
