Observed WIF and WIC without thermometer to accurately measure the ambient internal temperature of the units. CA: Advised PIC to obtain thermometers for WIF and WIC units.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed multiple food service containers in the ware washing area of the main kitchen not stacked in a manner that encourages air-flow for drying wet utensils. CA: Advised PIC to stack food containers in a manner that encourages air-flow for drying after washing.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed missing chlorine test strips for testing the concentration of sani-buckets. CA: Advised the PIC to submit an order for chlorine test strips.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of fluid from the ventilation system of the freezer on the base of the unit. CA: Advised PIC to clean up the accumulation of frozen liquid.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed ventilation/coolant system of the WIF with icicles and accumulation of frozen liquid on the base of the unit. CA: Advised PIC to send in maintenance request for the unit.
