Observed black and pink build up on the interior surface of the ice machine. CA advised PIC to clean out the ice machine and to set up a routine cleaning schedule in order to prevent further build up.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed several food boxes in the walk-in freezer being stored directly on the ground. CA advised pic that all food items must be held at least 6 inches above the ground in order to prevent possible contamination.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed inability to provide test strips in order to adequately measure the levels of sanitizer in the three-compartment sink and dish washers. CA advised PIC to order the appropriate test strips for each of their warewashing devices.
