Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed handwashing sink being used to store equipment, which reduces accessibility and increases risk of contamination. CA advised PIC to remove all items in the sink and to stop using the handwashing sink for purposes other than handwashing.
4-2A - food stored covered

Observed food uncovered in several reach in coolers and in the downstairs walk-in cooler.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed Soda gun nozzles with visible build up and residue. Observed Ice machine with black mold-like substance on the interior walls.CA Instructed PIC to implement a regular cleaning routine for both the soda gun nozzles and ice machine in order to prevent the accumulation of residue and debris.
11D - thermometers provided and accurate

Observed no thermometers inside of several reach in coolers and freezers in the main kitchen and basement. CA advised PIC to place thermometers inside all refrigeration in order to keep track of internal ambient temperatures.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Observed chemical dish machine and three compartments sink not dispensing sanitizer at the required level. CA advised PIC to cease the use of the dish machine and three compartment sinks until maintenance is able to come and adjust the levels of concentration for proper sanitization.
