Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed a freezer full of unmarked bags of chicken and beef that was not in original packaging that was not date marked. CA: Advised PIC to date mark any bag that is not the original container.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(b),(c) - manual warewashing, sink compartment requirement; drainboards (pf, c)
Observed improper order of the wash, rinse, sanitize set up. Order observed was wash, sanitize, rinse. CA: Washed utensils and equipment shall be rinsed so that abrasives are removed and cleaning chemicals are removed or diluted through the use of water or a detergent-sanitizer solution by using one of the following procedures: Use of a distinct, separate water rinse after washing and before sanitizing if using: A 3-compartment sink.

Observed test strips were over 6 years old and did not work properly. CA: Advised pic to purchase new sanitizer test strips.
