Observed a black mold like substance on the drink nozzle for the tea dispenser. 5. Except when dry cleaning methods are used as specified under subsection (7)(e) of this Rule, surfaces of utensils and equipment contacting food that is not time/temperature control for safety food shall be cleaned: (iv) In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment:
(I) At a frequency specified by the manufacturer; or
(II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. PIC cleaned and sanitized the drink nozzle.

Observed the bleach concentration of the sani buckets on the grill prep line was above the recommended range. See comments for readings. 2. Cloths in-use for wiping counters and other equipment surfaces shall be:
(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and
(ii) Laundered daily.
PIC changed out the sani buckets.

Observed 0 ppm for the Quat sanitizer solution and 0 ppm for the chlorine sani buckets. PIC will contact their vendor to check and repair the sanitizer line for the 3C sink and will ensure sani buckets are changed tested the correct concentration.

Observed no quat test strips upon request at the time of inspection. Concentration of the sanitizing solution shall be accurately determined by using a test kit or other device. PIC will purchase quat test strips to determine quat sanitizer concentration.
