Observed two hand sinks without paper towels. Each handwashing sink or group of adjacent handwashing sinks shall be provided with individual, disposable towels. PIC installed paper towels.

Observed croissants and bagels on table without covering and donuts on carts without covering. Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. PIC covered the items and covers and bins have been ordered.

Observed water dripping from condenser in WIF onto boxes of hashbrowns. Observed multiple food boxes stored on the floor in the WIF and WIC. Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor. PIC will have boxes relocated. The hashbrowns were discarded.

Observed wet mop drying in mop sink with pad in sink. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. PIC has ordered hooks for mops.

Observed employee items on top and or above food items and single service items in the WIC, storage area and the glazing area. Lockers or other suitable facilities shall be provided and used for the orderly storage of employees' clothing and other possessions. PIC stated that she has ordered racks and hooks.
