Observed failure to store food in a way to prevent potential cross contamination. Observed raw chicken stored alongside raw beef, raw fish, and ready to eat sausage. Packaged and Unpackaged Food - Separation, Packaging, and Segregation.
- Food shall be protected from cross contamination by:
(i) Except as specified in paragraph (i)(IV) of this subsection, separating raw animal foods during storage, preparation, holding, and display from:
(I) Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables, P and
(II) Cooked ready-to-eat food PIC re organized food items

Observed failure to use or discard old by the printed expiration date. Observed carton of liquid whole eggs stored in cooler with an expiration date of 3/20/26 during and inspection on 3/23/26. Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. Observed failure to prevent potential contamination of food. Observed bottle of mayonnaise stored in a bin of prepared peppers and onions.
- Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food:
(i) In a clean, dry location;
(ii) Where it is not exposed to splash, dust, or other contamination; and
(iii) At least 6 inches (15 cm) above the floor PIC removed food item
