Observed mildew like/biological growth build up on cutting boards and prep top counter. Equipment food-contact surfaces and utensils shall be clean to sight and touch. PIC will clean and sanitize.

Informed PIC to replace worn-out boards and keep prep tops clean and free from observed mildew/biological growth build up. PIC had deflector plate removed and cleaned during inspection. Advised PIC to increase the frequency of cleaning ice machine to prevent the accumulation of mildew like growth. PIC will change cutting board.

Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.

Observed 3 compartment sink pipe leaking underneath the sink. A plumbing system and hoses conveying water shall be constructed and repaired with approved materials according to law. PIC placed work order.

Observed buildup of grease, and debris on floors in kitchen and storage. Observed buildup of dust on vent. Observed accumulations of debris on floor of walk-in freezer. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing. PIC will have facility cleaned.

PIC closed ice bins.

Food items removed from original packages shall be clearly and legibly identified in English with their common names. C/A: Advised the PIC to ensure that all food items not in their original containers are labelled.

Observed an employee wearing bracelets while prepping food. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. PIC will educate staff on proper jewelry wear.
