Observed single service napkins and single use cups being stored in boxes on the floor. All single use articles shall be stored 6in off floor in a clean, dry location.

Observed sink faucets and/or surfaces of utilized equipment with food/debris accumulation. Observed floor drain grates and plumbing pipes with build-up. Clean around the faucets, all sides of all equipment, surfaces of pipes, baseboards, refinish wall area behind the steam well table, dishmachine control panel, grates on floors, etc. Recommended to PIC/CFSM to create a cleaning list and schedule to assign/delegate to staff.

Observed raw shelled unpasteurized eggs in walk-in cooler. PIC informed me they cook eggs medium with a runny yolk. Only pasteurized eggs should be used in recipes if eggs are undercooked and if eggs are combined. No raw or partially cooked animal foods should be served. COS PIC will only use for personal use.
