Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed three different sanitizer buckets in the kitchen area had a Quat. sanitizer concentration of 0ppm at the time of this inspection. COS: Manager replaced sanitizer buckets. CA: Quat. sanitizer solution must be kept within the allowed concentration range of 200ppm to 400ppm to avoid contamination.
