Observed during the course of this inspection that reheated ready to eat meatballs were placed into hot holding at temps of 113,115,117 with the steam well unit displaying ambient water temps of 170+. COS: Meatballs were discarded and staff was instructed to use the available probe thermometer to ensure that the next batch was reheated to the corporate standard of 165. CA: Glynn Eh instructs management to train staff that RTE foods that are to be hot held must be reheated to the state standard temp of 135+ or the corporate standard temp whichever is higher and the process must be completed in 2 hours or less.
