4-1A - food separated and protected
Regulation: 511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii) - packaged & unpackaged food separation, packaging, and segregation (p, c)
Observed during the course of this inspection that a box of tempura shrimp was being stored on top of cases of avocado's and and a towel with red meat blood soaked through it stored on top of "Ready to Eat" Imitation crab meat and cream cheese rolls in the walk in cooler. COS: The tempura shrimp was relocated that the towel and affected Imt. crab meat was discarded. CA: Glynn EH instructs management to ensure that all foods are properly separated and protected by keep raw and undercooked animal proteins away from ready to eat foods separated by vertical stacking order or using separate areas of the walk in cooler.
Raw animal foods/blood should never come into contact with RTE foods or foods that will not be cooked.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed during the course of this inspection that the facility did not have a valid CFSM inside of the facility. CA: Glynn EH instructs facility management to have an employee with managerial control get a Certified Food Safety Manager certificate from an accredited group.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed during the course of this inspection that the facility ice machine displayed significant amounts of buildup inside of it. COS: Management was instructed to not use the ice and clean and sanitize the unit. CA: Glynn Eh instructs management to ensure that the internal surfaces of the ice machine are cleaned and sanitized often enough to keep the clean to sight and touch as well as sanitary.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed during the course of this inspection that the facility had old grease and food debris buildup on walls and other parts of the facility. CA: Glynn EH instructs management to deep clean the facility and ensure that it is cleaned often enough to ensure that old grease and food debris buildup is kept to a minimum.
