Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed ice in handwashing sink in kitchen area by soda fountain at the time of this inspection. COS: Manager informed staff to stop dumping ice in handwashing sink. CA: A handwashing facility may not be used for purposes other than handwashing.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed that dishwasher was producing a chlorine sanitizer solution of 10ppm at the time of this inspection. COS: EHS instructed manager to switch to washing dishes manually using a chlorine sanitizer solution within the allowed range of 50ppm to 100ppm. CA: Dishwasher shall produce a chlorine solution within the allowed range of 50ppm to 100ppm to properly sanitize dishes.

Observed a sanitizer bucket with a soap solution which had no sanitizer in the main kitchen area at the time of this inspection. COS: Manager added chlorine to said solution. CA: Sanitizer buckets shall be used with a sanitizer solution at the appropriate concentration range to avoid contamination.
