Observed during the course of this inspection that the facility had a bottle of quat sanitizer that's concentration was 500ppm+. COS: The bottle of sanitizer was emptied out and then filled from the properly diluted source. CA: Glynn EH instructs management to ensure that staff are using the properly diluted sanitizer generated at the 3 comp sink and not using the concentrated sanitizer straight out of the bottle.

Observed during the course of this inspection that the facility ice scoop bucket displayed old buildup inside of it. COS: Management cleaned and sanitized the ice scoops and bucket. CA: Glynn EH instructs management to ensure that the ice scoops and bucket are cleaned and sanitized often enough to ensure that they are clean to sight and touch as well as sanitary.

Observed during the course of this inspection that the facility had single service paper towels stored underneath a dripping AC unit. COS: Items were moved. CA: Glynn EH instructed management to ensure that all single service items are not stored underneath dripping water.

Observed during the course of this inspection that the facility had a box of sausage biscuits inside of a reach in cooler with internal temps of the sausage ranging 43-50 deg f. COS: Entire box of biscuits was discarded. CA: Glynn EH instructs management to ensure that all TCS food items are stored inside of refrigeration at temps of 41 deg f or below.

Observed during the course of this inspection that the facility dry storage room has a large back door that displayed a significant gap in the doorframe allowing a large amount of light to shine through. CA: Management stated that they will explore options to have the gap sealed off to protect the kitchen from outside elements.

Observed during the course of this inspection that the facility had multiple containers of cleaned and sanitized utensils awaiting use inside of containers filled with food debris/ grease buildup. COS: Utensils and storage containers were removed from storage to have them both cleaned and sanitized. CA: Management stated that they would clean and sanitize storage containers as well as utensils as often as necessary to ensure sanitary conditions.

Observed during the course of this inspection that the facility had single service "to-go" containers stored in the box directly on the floor. COS: PIC moved the box onto a shelf. CA: PIC stated that all staff will store single service items at least 6 inches off of the floor moving forward.
