Observed several TCS items being stored in the tall reach in cooler above 41F at the time of this inspection. COS: PIC discarded TCS items in the unit and informed maintenance to repair to ensure proper temperatures are being held at all times.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed ice machine in main kitchen area with build up in an empty screw hole at the time of this inspection. COS: PIC placed out of order and instructed maintenance to rinse, wash, and sanitize the area. CA: Ensure that the ice machine is rinsed, washed, and sanitized frequently enough to prevent build up.

Observed facility storing marinera sauce with a prep date of 5/27/26 and a discard date or 6/27/26, holding past the 7 days from prep date marked on the container. COS: PIC discarded. CA: Ensure that foods prepped or moved to a different container are labeled and used within 7 days of prepping.
