Observed a box with bagels left open in the walk in cooler at the time of this inspection. COS: Box covered. CA: All food shall be stored covered to avoid vertical contamination.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed facility using pH test strips instead of Quat sanitizer test strips at the time of this inspection. COS: EH provided some Quat. sanitizer test strips and allowed manager to take pictures of Quat test strip product to compare color scale. EH educated manager in the difference between pH and Quat. sanitizer test strips. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
