4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed during the course of this inspection that the dishwasher located at the bar was not supplying sanitizer. Supply bucket was empty. COS: Unit was removed from service. CA: Glynn EH instructs management to have the machine serviced so that sanitizer supply is resumed. Machine is not to be used until sanitizer supply is restored.
4-2B - food-contact surfaces: cleaned & sanitized

Observed during the course of this inspection that the facility had a soda gun located at the bar that displayed buildup on the dispensing surface. COS: Glynn Eh instructed management to have the surface cleaned and sanitized. Management complied. CA: Glynn EH instructs management to ensure that food contact/dispensing surfaces are cleaned and sanitized often enough to ensure that they are kept clean to sight and touch as well as sanitary.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed during the course of this inspection that the facility staff in the main kitchen were not storing their wiping cloths inside of sanitizer. CA: Glynn EH instructs management to ensure that staff are keeping their soiled wiping cloths are stored inside of appropriate strength sanitizer solution.
