6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS foods cold held above 41F in reach in cooler at front food service bar (Cole slaw 48, ranch 45). CA: Cold TCS food shall be maintained at 41F or below. COS: TCS foods were found to have been prepped less than 1 hour prior and were relocated to the walk-in freezer to be rapidly cooled to 41F or below. CFSM will have cooler serviced and have it rechecked by the Health Department. Final temperatures Ranch: 35F, Cole slaw 36F.
3/17: Checked RIC and it is maintaining proper temp (ranch=39F, cole slaw=40F). PIC stated gaskets were in disrepair, gaskets got replaced an issue resolved. -CP
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed multiple live flies throughout the kitchen. CA: Measures must be taken to control the presence of pests in facility. No COS can be noted. Inspector must return (follow-up inspection).
3/17: Visited facility and noted no flies present. Facility has been using fly spray provided by ecolab safe to use in facility. -CP
