6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS foods stored in the reach in coolers in the main kitchen cold holding below 41F. (raw chicken 51, raw steak 44, and raw chicken 49). Employees had the containers out during a busy period, around 30 minutes prior, before returning the TCS foods to the reach in cooler. CA: All cold TCS foods shall be held at 41F or below. COS: All TCS foods found to be holding below 41F were relocated to the reach in freezer for rapid cooling.

Observed cold TCS foods stored below 41F in walk in cooler (cucumber 51, sliced tomatoes 50, white sauce 53, kafta 49, lamb chop 52, lamb shwarma 47, raw chicken 48, chicken 46, cooked garbonzo 50, raw fish 51). Walk in cooler had failed late the afternoon before. CFSM relocated foods that could be moved to other coolers. Walk in cooler was serviced on 02/20/2026. Once walk in cooler was holding at 41F or below, foods were returned to walk in cooler afterward. CA: All cold TCS foods shall be stored at 41F or below. COS: Cold TCS foods found to be holding below 41F held over the past several days were discarded. Cold TCS foods made less than 4 hours prior were relocated to reach in freezer for rapid cooling. Foods from delivery on 2/20/26 had lids removed to aid cooling to 41F or below.

Observed stack of bread trays stored directly on the floor in the main kitchen. CA: Food shall be stored at least 6 inches from the ground. COS: CFSM had bread trays stored on rollers at least 6 inches above the ground.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed light visible around back exit door. CA: Outer openings of a food service establishment shall be protected against the entry of insects and rodent. COS: No COS can be noted; inspector must return to verify. Workorder placed to have weather stripping replaced and doorknob installed.
