Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
BASE VIOLATION: Observed potentially hazardous TCS foods improperly cold holding above 41 degrees F in RIC. CA: All TCS foods being cold held must be held at 41 degrees F or below. COS: TCS foods (see temp log) had been in cooler over 4 hours and were discarded.
