Observed chemical spray bottles without label of common name for identification CA: Potentially toxic materials shall be labeled with common name. COS: CFSMK had chemical spray bottles labeled with common name.
10D - food properly labeled; original container
Regulation: 511-6-1.04(4)(d) - food storage containers identified with common name of food (c)
Observed bottles of oil and butter without labeling of common name at cook station. CA: Food containers shall be labeled with common name. COS: CFSM had labels with common names applied to containers.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed employee with watch and bracelet preparing food in main kitchen. CA: Food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: CFSM had employee remove jewelry and wash hands.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Observed facility without test strips to test sanitizer solution. CA: Warewashing Equipment, Determining Chemical Sanitizer Concentration. Concentration of the sanitizing solution shall be accurately determined by using a test kit or other device. COS: CFSM was given test strips for temporary use. CFSM will order test strips to use for sanitizer.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed ceiling tile with water damage and concrete floor degraded with standing water in damaged areas. CA: All physical facilities shall be in good repair. COS: CFSM will have ceiling tile and floor repaired.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee materials and medicines stored on dry goods shelf above food product. No contamination observed. CA: Employees shall use designated areas as to avoid contamination of food or equipment. COS: CFSM had all employee items relocated.
