2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed one hand sink at drive thru area not operational (work order placed while in inspection), and other hand sink by bulk ice machine blocked by trash can and ice bucket on stand. Two hand sinks with glass cleaner stored on splash guards. CA: All hand sinks shall be easily accessible and in good operation and maintenance. COS: PIC relocated trash can. Work order placed for hand sink. Glass cleaner relocated.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed several live flies throughout facility and coming into contact with food. CA: Food service facilities shall take appropriate actions in order to prevent pests. COS: PIC is placing fly strips and food was discarded.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed scoop handles being stored in fruit toppings with handle in contact with product. CA: Scoop handles shall not come into direct contact with product. COS: PIC removed scoops and replaced.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed facility using Quat based sanitizer with no test strips to verify proper concentration. Facility currently has chlorine test strips. CA: Food service facilities shall have a proper verification device for sanitizing method.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed wall behind 3 compartment sink with buildup, wall behind prep cooler with buildup, and several cooler gaskets with debris buildup. CA: All non food contact surfaces shall remain clean and in good repair.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee personal items (purse, keys) stored on dry stock shelving above facility food. CA: All employee personal items shall be stored in order to prevent the potential contamination of facility food or equipment. COS: PIC relocated employee items.
