Observed cold TCS food stored above 41F in reach in cooler at front food service (Sauerkraut 47). TCS food was prepped less than 1 hour prior. CA: Cold TCS food shall be stored at 41F or below. COS: PIC relocated food to another reach in freezer for rapid cooling.

Observed single service knives stored in box in varying positions for consumers to grab. CA: Single-service and single-use articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented. COS: PIC removed single service knives from dining area.
