Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed handwash sink at front bar with plastic bags stored over the attached guard. CA: Handwash sinks shall be used only for handwashing and for no other purpose. COS: PIC removed plastic bags.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed box of antacids stored above dry goods prep table in main kitchen. CA: Storage, Separation. Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use article. COS: PIC discarded medicines and will educate staff about proper placement and area for employee medicines.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(z) - miscellaneous sources of contamination (c)
Observed heavy ice build-up on racking in walk in freezer. No food contamination involved. CA: Food shall be protected from contamination. COS: PIC scraped ice away and will monitor unit for ice build-up.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed handle of scoop in dry good bin with heavy buildup. CA: Equipment, utensils, and food and non-food contact surfaces shall be free of accumulation. COS: PIC removed scoop to be washed and sanitized.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed commercial range hood over cooking area with excessive grease and debris build-up. CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. COS: No corrected on site. PIC will contact range hood cleaning services to have range hood cleaned. Will have hood rechecked by Health Department.
