Observed handwashing sink without hot water. CA: A handwashing sink shall be equipped to provide tempered water at a temperature of at least 85ºF. No COS can be observed, inspector must return to verify hot water availability.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed cooked breaded pork and cooked breaded chicken stored in reach-in cooler without date marking. CA: Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F or below for a maximum of 7 days. COS: Food items were discarded.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(p) - refrigerated medicines, storage (p)
Observed personal medicine container stored in refrigerator over food. CA: Medicines belonging to employees or that require refrigeration and are stored in a food refrigerator shall be stored in a package or container and kept inside a covered, leakproof container that is identified as a container for the storage of medicines. COS: No contamination was observed, medicine container moved to bottom shelf away from food.

Observed multiple food storage containers not labeled with food common name. CA: Food Storage Containers must be identified with common name of food. No COS can be noted. Inspector will return to verify food containers have been labeled.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed rodent droppings at dry storage shelving. CA: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by Routinely inspecting incoming shipments of food and supplies; Routinely inspecting the premises for evidence of pests; and Eliminating harborage conditions. No COS can be observed. Pest control frequency must be increased. Items not needed will be discarded. Will perform follow-up inspection on April 13.
