6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several containers of food in reach in coolers without proper date marking. CA: Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days COS: CFSM had prepped 2 days prior. CFSM date marked all containers without date marking prepared within 7 days.
8-2B - toxic substances properly identified, stored, used

Observed bottle of bleach stored on prep top surface in main kitchen. CA: Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles. CFSM relocated bleach to chemical storage.
