Observed dishes being sanitized in the 3 compartment sink with a Quat sanitizer concentration less than 200ppm. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operations must meet a specified minimum concentration (for chlorine sanitizer it must be 50-100 ppm; for quat ammonia, it must be used according to the manufacturer's specifications). (P) Corrective Actions: Quat sanitizer was adjusted to a concentration of 300ppm and dishes were resanitized.

Observed fresh bananas on site and facility does not have a vegetable sink for washing fresh produce. Per owner, he applied to install a vegetable sink with the city of Dacula. Discussed with owner that if he is going to install a vegetable sink, he must also apply for a remodel with Gwinnett County's Environmental Health Department. Discussed that if he does not want to install a vegetable sink, only frozen bananas or bananas that are purchased pre washed must be on site (documentation indicating bananas are pre washed must be available upon request). If frozen or pre washed bananas cannot be purchased and a vegetable sink is not installed, bananas must be removed from the menu. Raw fruits and vegetables shall be thoroughly washed in water, in a sink designated for that purpose only, to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form. (Pf) Corrective Actions: Bananas discarded. Remodel application provided.
