6-1A: .04(6)(f)Various TCS (time control for safety) foods cold holding at temperatures greater than 41 deg F. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: Cold held foods over 4 hrs discarded. Cold held food under 4 hrs temporarily using time control until unit is repaired.
