Routine
All cold-holding and hot-holding observed in compliance. No additives used in facility. Facility only uses shell eggs for baked goods. Facility does not utilize time control, key drop deliveries or par cooking. An informal inspection will be conducted on or before 2/26/26 to ensure all violations are corrected. 4-1A: .04(4)(n)1Observed employee washing dishes handling dirty dishes to be loaded into dish machine while wearing gloves. Employee then removed dish rack from dish machine and put away the clean and sanitized pot with same gloves. If used, single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. (P) Corrective Actions: Person in charge (PIC) had employee remove gloves, wash hands, done new gloves and rewash contaminated pot. PIC trained employee on proper hand washing and glove usage to prevent further violations.

15B: .05(3)(h),(i)Observed facility utilizing quat sanitizers all test strips onsite expired. One roll expired in 2019 and one expired 1/2025. A test kit or other device that accurately measures the concentration in mg/L (or ppm) of sanitizing solutions shall be provided. (Pf)
