4-2B: .05(7)(a)1Observed multiple plates stored as clean on racks beside salad station that still had food debris on them. // Equipment food-contact surfaces and utensils shall be clean to sight and touch. (Pf) Corrective Actions: Person-in-charge (PIC) had dishes moved to the dish pit to be rewashed, rinsed, and sanitized. //

14B: .05(10)(e) 1,2,4Observed working containers stored as clean, but stacked wet on shelf across from dish pit. // After cleaning and sanitizing, equipment and utensils:
- Shall be air-dried or used after adequate draining before contact with food; (C) and
- May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. (C) Corrective Actions: Person-in-charge (PIC) hand dishes rewashed and separated to allow air dry. //
